Here's another post in my Christmas series throughout December! I love baking throughout the year, but I especially love it nearer Christmas. Baking all the Christmas treats for friends and family and parties. These gingerbread men would be perfect for parties or even popped into a little presentation bag and given to friends and family as a little gift, which is what I am planning on doing when it's slightly nearer to Christmas just as a little extra present. This was actually the first time that I had made gingerbread of any sort and it was super easy, so perfect for absolutely anyone to try, even a baking novice. So, on with the post..
Ingredients: 350g plain flour, plus extra for rolling out
125g butter
175g soft light brown sugar
1 free range egg
1 tsp bicarbonate of soda
1 tsp ground cinnamon
2 tsp ground ginger (I add 3 because I like it a bit more gingery)
4 tbsp golden syrup
To decorate: writing icing, any other cake decorations you want
Method:
1. Sift together the flour, bicarbonate of soda, ground ginger and ground cinnamon into a large mixing bowl. Add the butter and mix everything together until it looks like bread crumbs. Then stir in the sugar.
2. Lightly beat the egg and golden syrup together in a separate bowl. Add the beaten mixture to your bowl with the dry mixture. Mix the wet and dry mixtures together until everything clumps together, Tip the dough out onto a floured surface and knead it briefly until it becomes smooth. Wrap your ball of dough in cling film and leave in the fridge to chill for 15 minutes.
3. Preheat your oven to 180C (170C for a fan oven) / 350F / Gas 4. Line two baking trays with grease proof paper. You may need to line more (I needed three trays).
4. Take your dough out of the fridge and roll out onto a lightly floured surface to a thickness or 3-4mm. Using pastry or cookie cutters, cut out your gingerbread man shapes. They could be gingerbread men, christmas trees whatever you wish. Place your cut out shapes onto your baking trays, making sure to leave spaces between each of them.
5. Bake for 12-15 minutes, or until lightly golden brown. Leave to cool on the tray for 10 minutes, then remove and leave to cool completely on a wire cooling rack. When the biscuits have completely cooled down they are ready to decorate however you want.
